Milwaukee & Lake Geneva, Wisconsin

Cake & Desserts

In Milwaukee & Lake Geneva: Twelve bakers serve the region. The summer here is warm rather than extreme — July averages a high of about eighty-two degrees — so an outdoor cake is workable in a way it is not in the desert regions of this catalog. The constraint is the site rather than the thermometer. A county park has no cooler, no kitchen and no shade you did not bring, and the cake has to arrive inside your permitted window rather than that morning. On the lakefront, add wind: a tiered cake in a steady onshore breeze is a different proposition from one in a sheltered garden. Talk to your baker about the site and the hour, not only the date. Budget $6 to $12 a slice.
