Cake & Desserts

In Austin: Heat is the design constraint. Buttercream sags outdoors above the mid-eighties, and a cake that photographed perfectly at the drop-off can look tired an hour into the reception if it has been sitting in a warm tent. Ask any baker you interview what they recommend for a summer or outdoor Hill Country reception; the honest answers involve fondant, more structured buttercreams, or a design that keeps the fragile decorative work indoors until service. Ice cream carts, snow cone bars and other frozen desserts are a legitimate move here rather than a novelty -- they hold in the heat, they read as regionally appropriate, and guests actually eat them. On the cake itself, confirm the delivery window, how the cake will be held between arrival and cutting, and whether the venue can provide a shaded, cooler holding area. A cake left in the sun is a cake you have already lost.
