In Memphis: Twelve bakers made the shelf, scattered across Memphis and the county with singles down into Mississippi. Two questions decide the price. The first is what a Southern summer does to a cake — heat and humidity through September make delivery, staging and refrigerated hold windows a real line rather than a footnote, and a baker who is honest about a two-tier limit for outdoor July heat is telling you the truth. The second is what the venue's cutting fee is: some Memphis-metro reception rooms charge one for outside cake, and a cutting fee on a sheet cake reads as a very different number by the time dessert is served. The classic tidy trick works here — a small display cake for the cutting photo and a cheaper sheet or dessert spread served to the room.
