In Charleston: Two local things drive this line. First, many downtown venues require you to use their in-house kitchen, so the caterer is chosen for you and the food-and-beverage minimum is effectively a second venue fee — ask what the minimum is before you fall for the room. Second, at a grounds site the caterer is also bringing a kitchen, which means generators, prep tents and staff travel, and that is quoted separately more often than couples expect. Budget $75-150 a head for full service and read what sits underneath it: staffing, service charge, and sales tax are three different additions and all three land on the subtotal. The local menu is genuinely worth leaning into — shrimp, oysters and rice do more here than a flown-in filet.
