In Boston: Delivery and setup are the questions worth asking, and the answers change with the season. A tiered cake driven out to a coastal site in August meets humidity and salt air; the same cake in a historic building in October meets a narrow staircase and a room the caterer needs cleared. Ask the baker plainly where the cake will stand, who sets it up, and whether there is a cool interior space it can wait in. At $8 to $18 a slice the cutting cake is rarely the whole dessert budget, and this is a region with deep bakery traditions in the city and its immediate neighbors worth using for the rest of the table. A small cake for the photograph and a spread for the room is a perfectly good plan.
