New Orleans, Louisiana
Cake & Desserts
In New Orleans: Two local traditions worth knowing. Doberge is the New Orleans cake — thin layers, lemon or chocolate custard, a poured icing — and asking for it marks you as someone who did the reading. The groom's cake is taken seriously here, often themed and often chocolate, and it is a genuine second dessert rather than a formality. If you are marrying between Twelfth Night and Mardi Gras, a king cake on the dessert table is the cheapest bit of local colour available to you. Practically: buttercream and this climate do not agree outdoors, so talk to your baker about a fondant or a stabilised finish for any cake that will sit in the heat, and settle who is refrigerating and delivering it.
