In Chicago: Delivery is the local risk. A cake crossing this metro in August heat, or during a winter storm, spends real time in a vehicle, so agree the delivery window, the route and who on site is authorized to receive and finish it. Downtown that means a dock, a freight elevator and somebody with the building's access; in a suburban banquet room it usually means a back door and a manager. Ask where the cake will actually stand, because a tented or lakefront reception has no cool, still corner, and a reference range of $7 to $15 a slice does not cover a cake that softens in the sun.
