In Savannah: Twelve bakers serve the region and the regional problem is simple: heat. A cake that is fine in a ballroom is in trouble on a square in June, when afternoons run upper-80s to low-90s, and buttercream in particular does not forgive a long outdoor display. Talk to your baker about the ceremony site and the hour, not only the date, and ask what they would build differently for an outdoor summer event. In a square there is no cooler, no kitchen and no shade you did not bring, and the cake has to arrive inside your permitted window rather than that morning. Delivery into the historic district also means a truck that may not park close. Budget $6 to $12 a slice, and consider a small display cake for the photograph with a sheet cake served to the room.
